Beets (and the beat goes on)

I know that beets are not one of the most loved foods, but maybe we should try them again.   I actually like them when they are very cold on top of a salad.  Beets are considered “nature’s multivitamin.” Beets contain the greatest range of nutrients ounce for ounce than any other fruit or vegetable. They help protect against heart disease, birth defects and certain  cancers, especially colon cancer.  The antioxidants that give beets their deep red color fight free radicals that lead to aging.  Beets have also been shown to lower blood pressure and the risk of heart disease.  Beets help cleanse the body of harmful chemicals in processed foods.
I’m definitely going to eat more beets!
